Nose
Banana comes through clearly at first, lifted by mellow toffee and soft vanilla. Behind it sits toasted oak, adding warmth and a touch of spice.

Palate
Banana leads again, supported by rich oak character that gives structure and depth. Notes of toffee and vanilla weave through, keeping it rounded but never cloying.

Finish
Banana and oak linger together, with gentle spice and vanilla carrying on the tail. Long, warming and moreish.


Process
Our Exotic Banana Rum begins with raw sugar cane molasses, fermented for 4 to 7 days with our proprietary yeast strains to build a foundation of rich, tropical flavours. Distilled using both traditional double retort pot stills and an 8-plate column still, we artfully blend four distinct distillates to craft a bold, vibrant spirit.

Flash-aged for 24 hours with a combination of heavily charred French and American oak chips, this unique process adds layers of caramelised banana, vanilla, tropical fruit, and coconut notes. We then blend the rum with fresh banana essence, creating a lush, exotic spirit that captures the essence of sun-drenched islands.

The result is a smooth, flavourful rum with tropical warmth and a clean, crisp finish—perfect for sipping neat or adding a burst of tropical flavour to cocktails.

  • 50ml Two Lasses Exotic Banana Rum
  • 25ml Fresh lime juice
  • 15ml Demerara sugar syrup

Method
Shake hard with ice and strain into a chilled coupe. Garnish with a lime wheel.

Ingredients

  • 50ml Two Lasses Exotic Banana Rum
  • 10ml Toffee syrup (or demerara syrup if you prefer it less sweet)
  • 2 dashes Chocolate bitters

Method
Stir down over ice and strain into a rocks glass with a large cube. Garnish with a banana chip.

Pulls out the natural toffee and oak notes in the rum, with chocolate bitters adding depth. A dessert-inspired twist that’s smooth, balanced and sophisticated — never overly sweet.
