This rum is a journey of sophisticated flavours, where powerful spice meets authentic dark rum character. The experience begins with an intoxicating and highly aromatic nose, dominated by a rush of bold clove and deep, earthy allspice, balanced by a subtle background note of candied blackcurrant.

On the palate, the spice is immediate and intense. Rich, warming clove dominates the initial taste, giving way to a curious and delightful complexity of almond and cherry, remarkably reminiscent of a classic Bakewell tart. The added syrup provides a full, luxurious mouthfeel that expertly carries these powerful elements.

Process
Our rum is a product of relentless innovation and a deep respect for tradition, brought to life in our Northern England distillery.

Step 1: The High-Ester Base We begin with pure sugar cane molasses, fermented using our exclusive, proprietary yeast, the Wild Trinity Yeast. This is key to developing those complex, tropical, and fruity esters.

Step 2: Double Distillation & The Funk
We blend two distinct marks. Our Mark 1 is pot distilled for pristine character. The real magic happens in Mark 2, which is double-retort distilled with a game-changing addition of 'Muck,' a traditional practice that supercharges the high-ester funk and creates that distinct, 'fuel-like' aftertaste sought after by connoisseurs.

Step 3: Spice Infusion & Balance The potent, high-ester dark rum is married with a hand-selected blend of clove, allspice, and cinnamon. We finish the spirit with a measured amount of natural syrup, which perfectly balances the powerful funk and spice, ensuring a robust yet smooth sipping experience.

Spiced Old Fashioned

Bold and aromatic

Ingredients

  • 50ml Two Lasses Dark Spiced Rum
  • 5ml Demerara syrup
  • Orange zest to garnish

Method
Stir over ice and strain into a rocks glass with a large cube. Express the oils
from an orange zest over the drink and drop it in.

The Experience
Clove, cinnamon and allspice are rounded by demerara sweetness, while the
orange zest lifts the aroma. A simple, elegant way to sip the rum.

Dark & Stormy Yorkshire

Fiery and refreshing

Ingredients

  • 50ml Two Lasses Dark Spiced Rum
  • 20ml Fresh lime juice
  • Ginger beer to top

Method
Build in a highball glass filled with ice. Garnish with a wedge of lime.

The fiery ginger beer reins in the clove spice, while lime keeps the serve crisp and refreshing. A long drink with a proper kick.

Spiced Apple Toddy

Warming and comforting

Ingredients

  • 50ml Two Lasses Dark Spiced Rum
  • 100ml Hot cloudy apple juice
  • 10ml Honey (optional, to taste)

Method
Warm the apple juice gently (don’t boil), then combine with rum and honey in a
heatproof glass or mug. Garnish with a lemon wheel or apple slice.

The Experience
A rich, autumnal serve where hot apple rounds out the spice. Cloves, cinnamon
and allspice melt into soft orchard fruit, giving a cosy, mulled feel without being overpowering.

Spiced Old Cuban

Effervescent and elegant

Ingredients

  • 40ml Two Lasses Dark Spiced Rum
  • 20ml Fresh lime juice
  • 15ml Sugar syrup
  • Top with Champagne or Prosecco

Method
Shake the first three ingredients with ice and strain into a coupe glass. Top with chilled Champagne or Prosecco. Garnish with a mint sprig.
