Tasting Notes
Delight in an explosion of flavour, bursting with vibrant blackcurrant and classic notes of liquorice and star anise typical of a premium molasses rum. Blended with cloves, cinnamon, and allspice, this spirit reveals the enticing essence of cherry Bakewell, complemented by rich vanilla and caramel undertones; Perfect for sipping neat or adding to your favourite cocktails.


Process
Our Dark Spiced Rum is crafted from high-quality sugar cane molasses, undergoing two fermentations using our Head Distiller’s exclusive yeast for seven days, resulting in distinctive high-ester flavours.

We combine double pot distilled and double retort distilled spirits to create a rich and complex base.

After distillation, the rum is rested for one week with heavily charred American oak wood chips, which contribute rich notes of vanilla and caramel. This maturation process enhances the rum's character, while classic dark rum flavours of liquorice and star anise emerge from the double pot molasses distillation. Our Head Distiller then blends in cloves, cinnamon, and allspice, adding warm, spiced notes.

Spiced Old Fashioned

Bold and aromatic

Ingredients

  • 50ml Two Lasses Dark Spiced Rum
  • 5ml Demerara syrup
  • Orange zest to garnish

Method
Stir over ice and strain into a rocks glass with a large cube. Express the oils
from an orange zest over the drink and drop it in.

The Experience
Clove, cinnamon and allspice are rounded by demerara sweetness, while the
orange zest lifts the aroma. A simple, elegant way to sip the rum.

Dark & Stormy Yorkshire

Fiery and refreshing

Ingredients

  • 50ml Two Lasses Dark Spiced Rum
  • 20ml Fresh lime juice
  • Ginger beer to top

Method
Build in a highball glass filled with ice. Garnish with a wedge of lime.

The Experience
The fiery ginger beer reins in the clove spice, while lime keeps the serve crisp and refreshing. A long drink with a proper kick.

Spiced Apple Toddy

Warming and comforting

Ingredients

  • 50ml Two Lasses Dark Spiced Rum
  • 100ml Hot cloudy apple juice
  • 10ml Honey (optional, to taste)

Method
Warm the apple juice gently (don’t boil), then combine with rum and honey in a
heatproof glass or mug. Garnish with a lemon wheel or apple slice.

The Experience
A rich, autumnal serve where hot apple rounds out the spice. Cloves, cinnamon
and allspice melt into soft orchard fruit, giving a cosy, mulled feel without being overpowering.

Spiced Old Cuban

Effervescent and elegant

Ingredients

  • 40ml Two Lasses Dark Spiced Rum
  • 20ml Fresh lime juice
  • 15ml Sugar syrup
  • Top with Champagne or Prosecco

Method
Shake the first three ingredients with ice and strain into a coupe glass. Top with chilled Champagne or Prosecco. Garnish with a mint sprig.
