Our new recipe Yorkshire Spiced Rum is everything a winter evening asks for. And then some.

Inspired by the nostalgic warmth of Yorkshire Parkin, this rum is a full-bodied tribute to tradition, craft, and northern soul. It’s made from scratch in Northern England and blended for depth, comfort, and unmistakable character.

On the nose, expect a welcoming hug of ginger, treacle and toasted spice — rich and aromatic, like a cake baking in a warm kitchen. The first sip is silky with vanilla and dark caramel, coating the mouth like golden syrup on sponge. As it lingers, it deepens into plump raisins, perfumed ginger and festive spice, echoing the finish of a classic homemade Parkin. Bold, warming, and satisfying to the core.

Tasting Notes
Nose:
Warm and inviting with sweet fresh ginger, dark treacle, and a touch of nutmeg. Like the comforting scent of Yorkshire Parkin straight from the oven — deep, spiced, and nostalgic.

Palate:
Beautifully balanced and full-bodied. Expect silky vanilla, burnt sugar, and a luxurious caramel sweetness that coats the mouth. Hints of molasses and baking spice add a moreish depth.

Finish:
Long, warming and complex. A lingering mix of raisins, spiced ginger, and a whisper of Christmas cake richness. Smooth to the end, with just the right amount of heat.
Process
Our Yorkshire Spiced Rum begins with raw sugar cane molasses, fermented for 4 to 7 days using our carefully selected yeast strains to build a deep, characterful base.

Distilled in both traditional double retort pot stills and an 8-plate column still, we blend four distinct distillates to create a bold yet balanced foundation.

The rum is then flash-aged for 24 hours with a mix of heavily charred French and American oak chips, infusing layers of toasted pecan, winter spice, vanilla, and soft smokiness.

Finally, we blend in ginger and our secret Yorkshire Parkin recipe — a nod to the classic Northern treat — to bring warmth, richness, and a deeply nostalgic finish.

Crafted by our Head Distiller, this is a spiced rum that respects tradition, celebrates flavour, and captures the soul of Yorkshire in every sip.

Parkin Old Fashioned

Warming and spiced

Ingredients

  • 50ml Two Lasses Yorkshire Spiced Rum
  • 10ml Treacle or Demerara syrup
  • 2 dashes Aromatic bitters
  • Dash of Ginger bitters (optional)

Method
Stir down over ice and strain into a rocks glass with a large cube. Garnish with a slice of candied ginger.

Gingerbread Espresso Martini

Ingredients

  • 35ml Two Lasses Yorkshire Spiced Rum
  • 25ml Fresh espresso
  • 15ml Coffee liqueur
  • 10ml Gingerbread syrup

Method
Shake hard with ice and strain into a martini glass. Garnish with grated nutmeg.

Coffee, spice, and treacle come together in a bold, dessert-like serve. Perfect for after dinner when you want a little indulgence.

 

Parkin Rum Punch

Fruity and festive

Ingredients

  • 50ml Two Lasses Yorkshire Spiced Rum
  • 75ml Cloudy apple juice
  • 25ml Fresh lemon juice
  • 10ml Ginger syrup
  • Dash of Aromatic bitters

Method
Build long over ice in a highball glass. Garnish with an apple fan and a cinnamon stick.

Juicy apple and sharp lemon are balanced by warming ginger and spice. A long,
easy-drinking serve that brings mulled cider vibes without the heat.

 

Yorkshire Mule

  • 50ml Two Lasses Yorkshire Spiced Rum
  • 20ml Fresh lime juice
  • Ginger beer to top

Method
Build in a highball glass or copper mug filled with ice. Garnish with a lime wedge.

  • 40ml Two Lasses Yorkshire Spiced Rum
  • 10ml Treacle or Demerara syrup
  • 20ml Double cream
  • 1 Egg yolk (optional, for richness)

Method
Shake vigorously with ice and strain into a coupe glass. Garnish with grated nutmeg.
