On the first sip you get gentle tropical sweetness without the heavy, sugary feel found in many flavoured rums. The body is light but warm, with a subtle woody note that gives it depth, and a soft, lingering finish that is easy to drink.
Process
Our Exotic Pineapple & Coconut Rum starts with raw sugar cane molasses, fermented over 4 to 7 days using our proprietary yeast strains to create a tropical, flavour-rich base. Distilled with both traditional double retort pot stills and an 8-plate column still, we blend four distinct distillates to achieve a bold, well-rounded spirit.

Flash-aged for 24 hours using a mix of heavily charred French and American oak chips, this process imparts notes of vanilla, caramel, toasted coconut, and spice. We then blend the rum with premium natural pineapple and coconut flavourings, creating an indulgent, sun-kissed flavour profile reminiscent of a tropical paradise.

The result is a smooth, vibrant rum with layers of tropical sweetness and a crisp, refreshing finish—perfect for sipping neat, over ice, or mixing into a variety of cocktails.

Ingredients

  • 50ml Exotic Pineapple & Coconut Rum
  • 75ml Fresh pineapple juice
  • 25ml Coconut cream
  • 10ml Fresh lime juice

Method
Shake with ice until smooth and creamy. Strain into a chilled hurricane or
highball glass over crushed ice. Garnish with a pineapple wedge and cherry.

Pineapple & Coconut Mai Tai
  • 60ml Two Lasses Pineapple & Coconut Rum
  • 25ml fresh lime juice
  • 15ml orgeat syrup
  • 15ml of Cointreau
  • Garnish with mint (a lime if you like)

Add all ingredients to a cocktail shaker, except the garnish. Shake and strain into a rocks glass filled with crushed ice. Garnish with fresh mint and a lime if you fancy that. You can also float some dark rum on top of the cocktail.

Pineapple & Coconut Daiquiri
  • 60ml Two Lasses Exotic Pineapple & Coconut Rum
  • 35 ml Pineapple Juice
  • 15ml Lime Juice (Freshly squeezed)
  • 10ml Sugar Syrup

Shake all ingredients with ice and fine strain into an ice-filled glass.
