Tasting Notes
This exotic blend of Two Lasses premium rum, with vanilla, coconut and charred pineapple creates the perfect summer vibe. Creamy vanilla on the nose with a lick of sweet coconut, transition to rich raisins and fruitcake, coming to rest with refreshing and succulent pineapple; Lovely to sip with ice or as a base to your own exotic Pina Colada.
Process
Our Exotic Pineapple & Coconut Rum starts with raw sugar cane molasses, fermented over 4 to 7 days with our unique yeast strains to create a rich base of flavours. Triple distilled in traditional copper pot stills, flash-aged for 24 hours with oak chips and finally blended with premium natural pineapple and coconut flavourings, creating an indulgent, sun-kissed flavour profile reminiscent of a tropical paradise.

The result is a smooth, vibrant rum with layers of tropical sweetness and a crisp, refreshing finish—perfect for sipping neat, over ice, or mixing into a variety of cocktails.

Crafted by our Head Distiller, our Exotic Pineapple & Coconut Rum is a harmonious blend of island flavours and innovative craftsmanship.

Two Lasses Exotic
  • 60ml Two Lasses Exotic Pineapple & Coconut Rum
  • 15ml Passion fruit puree
  • 15ml Freshly squeezed orange juice
  • 15ml Freshly squeezed lime juice
  • 10ml Simple syrup
  • 1 Teaspoon Grenadine
  • 1 Slice of pineapple to garnis
  • 1 Maraschino cherries to garnish

Add ice and all liquid in to a cocktail shaker. Shake it up and pour in to your chosen glass. Garnish with the pineapple and cherry.

Pina Colada
  • 60ml Two Lasses Exotic Pineapple & Coconut Rum
  • 100ml fresh pineapple juice
  • 60ml coconut cream
  • Squeeze of lime juice
  • Crushed ice

Blend it up... Place the rum, pineapple juice, coconut cream and a generous squeeze of lime juice in a blender with a few handfuls of crushed ice and pulse until smooth. Pour into glasses and garnish each one with a wedge of fresh pineapple and a Maraschino cherry – cocktail umbrellas optional...

Pineapple & Coconut Mai Tai
  • 60ml Two Lasses Pineapple & Coconut Rum
  • 25ml fresh lime juice
  • 15ml orgeat syrup
  • 15ml of Cointreau
  • Garnish with mint (a lime if you like)

Add all ingredients to a cocktail shaker, except the garnish. Shake and strain into a rocks glass filled with crushed ice. Garnish with fresh mint and a lime if you fancy that. You can also float some dark rum on top of the cocktail.

Pineapple & Coconut Daiquiri
  • 60ml Two Lasses Exotic Pineapple & Coconut Rum
  • 35 ml Pineapple Juice
  • 15ml Lime Juice (Freshly squeezed)
  • 10ml Sugar Syrup

Shake all ingredients with ice and fine strain into an ice-filled glass.
