Blended with cloves, cinnamon, and allspice, this spirit reveals the enticing essence of cherry Bakewell, complemented by rich vanilla and caramel undertones; Perfect for sipping neat or adding to your favourite cocktails.
Process
Our Dark Spiced Rum is crafted from high-quality sugar cane molasses, undergoing two fermentations using our Head Distiller’s exclusive yeast for seven days, resulting in distinctive high-ester flavours.
We combine double pot distilled and double retort distilled spirits to create a rich and complex base.
After distillation, the rum is rested for one week with heavily charred American oak wood chips, which contribute rich notes of vanilla and caramel. This maturation process enhances the rum's character, while classic dark rum flavours of liquorice and star anise emerge from the double pot molasses distillation. Our Head Distiller then blends in cloves, cinnamon, and allspice, adding warm, spiced notes.
